Our story

where mai matcha
comes from.

For eight centuries, the hills of Uji have shaped Japanese tea. It's where the finest matcha has always come from — and where we found the growers behind ours.

The leaf was extraordinary and grown by people who were completely devoted to it. Shaded the traditional way, hand-tended, stone-ground slowly into a powder so bright it almost glows.

So we reached out and built relationships with the growers behind it — not to scale them up or change a thing, but to support them. To keep things small and careful, and to bring their matcha, exactly as it is, to the people we love.

How it's made

slow, by stone.

Shaded leaf is steamed, dried, and de-veined into tencha — then ground between granite wheels turning slowly enough to keep it cool. A single stone mill yields only about forty grams an hour. We wouldn't rush it for anything.

01 Sift one teaspoon (≈2g) of matcha into a warm bowl.
02 Add 60ml of water just off the boil, around 80°C.
03 Whisk briskly in a W until a fine, even foam forms. Drink, and feel wonderful.
